Cabbage for Kielbasa

Ingredients
5 serving Pancetta 1 oz (by LAPOIO) 6 tsp Granulated Sugar 1 medium (2-1/2" dia) Onions, raw 2 clove Garlic .25 tsp Pepper, red or cayenne .25 tsp Salt 1 head, large (about 7" dia) Cabbage, fresh
Directions
Step 1
In a large skillet, fry pancetta (or 6 slices of bacon) over medium high heat until browned, turning once. Remove bacon from pan, reserving drippings, and place on paper towels.

Step 2
Stir water, sugar, onions, garlic, red pepper flakes, seasoned salt, and caraway seeds into drippings. Add cabbage, and gently stir. Cover, and cook over medium heat for 10 to 15 minutes.

Step 3
Crumble pancetta over top, and serve hot alone or with cooked kielbasa.
