6 medium (7" to 7-7/8" long) Banana, fresh MASHED1 cup, chopped Pecans (walnuts)1.5 cup Quaker Oats Old-Fashioned Rolled Oats 2 cup Whole Wheat Flour 1 cup, packed Brown Sugar 6 tsp Baking Powder baking 0.5 tsp Ginger, ground (I used fresh/fridge rated/chopped for bolder flavor)1 tsp Salt 2 large Egg, fresh, whole, raw 0.25 cup Milk, 1% (I used nonfat 1/2&1/2..all I have in hand)12 tbsp Butter, unsalted (melted)1/2 cupGreat Value No Calorie Stevia 2 tbsp Molasses
Pre heat oven to 400°
Spray or lime muffin tin (set aside)
Combine the mashed banana, nuts, oats, flour, brown sugar, baking powder, ginger, and salt.
In a separate bowl whisk together melted butter, milk & eggs
Add egg/milk mixture to dry/banana mixture...stirring til combined
Fill muffin cups with 1/4 - 1/3 cup batter
Bake 18-20 min
Cool
Or serve warm
