Sour Cream Potato Salad

Ingredients
2 lbs. red potatoes3/4 c. low fat sour cream3/4 c. low fat mayonnaise3/4 c. finely chopped celery1/2 c. thinly sliced scallionscrumbled bacon (for garnish)
Directions
Cover potatoes with salted water. Bring to boil and reduce heat. Simmer until tender when pierced with sharp paring knife, approx 15 min. Drain well. In large bowl, whisk together sour cream and mayonnaise. Fold in warm potatoes, celery and scallions. Season with salt and pepper. Cover and refrigerate for one hour. Garnish with bacon and more scallions if desired.

    Made this last night with some variations, adding green olives, boiled eggs and some cheese. Delicious! But I need to season it some more next time. I didn't have any dill. - 9/26/09
