Vegan Spanish Rice

1 1/2 cups rice, prepared1 medium onion, chopped4 cloves garlic1 medium green pepper1 8-oz package mushrooms, sliced or chopped1 can black beans, drained and rinsed1 can kidney beans, drained and rinsed2 cans of diced tomatoes, drained
Prepare rice according to directions (or preference).
Saute onion in water until softened. Press in garlic. Stir and saute another minute. Add the beans, peppers, tomatoes and mushrooms and cook 15 minutes, stirring often, or until the beans are softened. Season to taste, then lower the heat to a low simmer, cover and cook until the rice is finished cooking. Stir the rice into the veggies and beans, allow to heat together for another five minutes, just to let the flavors mingle. Nosh!
