Mom's Homemade Potato Soup

Ingredients
8 cups Potatoes, peeled and sliced1 cup Celery, diced1 cup Onion, chopped3 Tbsp Butter10 cups Water1/4 cup Cornstarch2 cups 1% Milk
Directions
Saute the onion and celery in the butter until onions are translucent.

Put water and potatoes in a large pot, bring to a boil. Add celery and onions, reduce to medium heat. Cook until potatoes are soft.

Mix the cornstarch into the milk till there are no lumps, then add to soup.

Simmer for 5-10 more minutes, and you're done!

Add parsley or other herbs if desired.
Add salt and pepper to taste.

Makes about 20 cups - ten 2 cup servings.
