SCD applesauce cake

WET2 Tbsp Coconut Oil2 large Eggs2/3 cup SCD Applesauce2 tsp Vanilla¼ cup Honey DRY1 ½ cups almond flour1 Tbsp Cinnamon¼ tsp Salt ½ tsp Gingerdash Nutmeg
Preheat to 350ºF. Use 9 inch round or 8 inch square glass/ceramic. I haven't made in a metal pan. Line bottom with parchment. Sides can be rubbed with coconut oil.
Mix wet with stick blender
Mix dry with hand mixer, the pour in wet.
Pour into baking pan - it will spread to the sides.
Bake 30-40 minutes using toothpick to determine doneness.
I make my own applesauce by microwaving a couple of peeled apples til soft; drain off liquid, then mash with stick blender.
Serving Size: Makes 8 generous slices
