BBQ Pulled Brisket

32 oz Beef brisket 12 oz Diet Coke 1 medium (2-1/2" dia) Onions, raw 1 Serving(s) McCormick bbq BBQ Sauce Recipe -6 serving Heinz, One Carb Reduced Sugar Tomato Ketchup, 1 Tbsp 3 tsp Splenda Brown Sugar Blend 1 tsp Onion powder 1 tsp Garlic powder 1 tbsp Cider Vinegar 3 tsp Lea & Perrins, Worcestershire Sauce 1 Serving(s) Chipotle powder
Spray slow cooker with cooking spray. Coat brisket in both sides with McCormick BBQ seasoning. Add Diet Coke and onions and let cook on high for 6-7 hours. While cooking make the sugar free bbq sauce.
In a separate bowl mix, ketchup with remaining seasoning. Let sit so the flavors meld.
When the brisket is finished, drain some juice into a bowl. Shred brisket with two forks. Add bbq sauce and mix well. If it’s to thick you can add some of the juice you drained into a bowl.
We eat this on rolls with sugar free cole slaw.
