Cheesy White Chili with Cauliflower

Ingredients
1 tbsp Crisco Pure Vegetable Oil 2 large Onions, raw 1.5 cup Beans, white 6 cup (1" pieces) Cauliflower, cooked 1 pepper Jalapeno Peppers 1 cup, shredded Cheddar Cheese 142 grams Arugula
Directions
Cut the cauliflower into 1/2 inch slices. Cut the onions into wedges.
Roast the cauliflower and onions at 425 degrees for 15 minutes, flipping the pieces if you like midway through.
Oil a 9 X16 pan (or slightly smaller)
Add half the roasted cauliflower with the can of beans (rinsed and drained)
Top with 1/2 of the cheese and diced jalapeno
Top with the greens (don't worry if the greens look like they are overflowing the pan, they shrink while baking
Top with all the roasted onions and then the remainder of the cheese and jalapeno dice
Roast in 450 degree oven for 20 mins. Turn off heat but leave in oven if cheese starts to brown before 20 mins
