Sweet Potato Egg Bake

10 large Egg, fresh, whole, raw 2 sweet potato, 5" long Sweet potato (or one large sweet potato) shredded. .5 cup, chopped Onions, raw .75 cup, shredded Cheddar Cheese 1 large (2-1/4 per lb, approx 3- Peppers, sweet, red, fresh 1 cup milk, 1% 1 tbsp Basil 1 tsp Pepper, black .5 tsp Paprika
spray 9X11 baking pan with nonstick oil and preheat oven to 325 degrees.
shred sweet potato, finely dice onions,
Mix shredded sweet potatoes, onions, chopped red peppers, & shredded cheese in a large bowl and then spread evenly into the baking pan. use the same bowl to mix the remaining ingredients and then pour egg/milk mixture over the sweet potato mix. put in the oven and bake for 50 min. until browned on top.
Serving Size: makes 8 servings
