WFPB Reboot Salad (Esselstyns)

Ingredients
3 cup Cauliflower, raw 3 cup, chopped or diced Broccoli, fresh 3 stalk, large (11"-12" long) Celery, raw .5 cup, chopped Onions, raw 1 cup, chopped Carrots, raw .5 cup Lemon Juice 1 cup, packed Raisins 2 Tbs toasted sesame seeds
Directions
Soak raisins in hot water for about 15 minutes while chopping vegetables. Add 1 cup of soaking liquid, lemon juice and raisins to blender and puree. Chop all the vegetables to about pea size....very small. Toss with dressing and let set overnight if possible.
