Easy Chicken Salad

Ingredients
3 oz boneless Chicken Breast1 medium carrot2 medium radishes1/2 medium tomato2 cups lettuce, romaine or lettuce of choice2 tbsp olive oil and vinegar dressing1 tbsp fresh, grated Parmesan cheese
Directions
Peel or scrub carrot; coarsely dice carrot and radish; slice tomato. Rinse and spin dry salad greens; tear in small pieces and add to large salad bowl with vegetables. Rinse and pat dry chicken and on a separate cutting board cut into bite size pieces. Heat a nonstick skillet coated with cooking spray on medium heat; add chicken and cook until no longer pink inside, about 8-10 minutes. Remove chicken, cool for about 5 minutes and toss with vegetables and dressing. Top with Parmesan cheese and serve.
