Tuscan Soup

Ingredients
4 large links sweet or hot Italian Sausage4 cloves chopped garlic3 cups chopped kale1 cup chopped yellow onion1 cup diced russet potato4 cups chicken stock, home-prepared1 cup 1% milk
Directions
Remove casing from sausage and discard. Brown sausage in a soup pot, breaking it up into bite sized chunks. Remove sausage from pot when browned and set aside. Drain fat from pot, excepting 2 tbsp. Add chopped onion and garlic to the fat and sautee until onion is soft and garlic is fragrant. Add chopped potato and cover with chicken stock. Season with salt, pepper, and red pepper flake if desired. Bring to boil and reduce to simmer, and cook, covered, until potatoes are tender, about 20 minutes. Stir in chopped kale and let it wilt just slightly. Add sausage back to pot to rewarm. Remove from heat and stir in milk. Adjust seasoning with salt and pepper as needed. Serve immediately. Serving Size: A good ladle and a half
