Autumn Bisque Pumpkin Leek Soup

4 tbsp Extra Virgin Olive Oil 1.5 cup, chopped Onions, raw 3 tsp Garlic .75 cup, chopped Carrots, raw .5 cup, diced Celery, raw 4 cup Imagine Organic Low Sodium Vegetable Broth (by FIRESCORPION) 2 cup, pieces or slices Mushrooms, fresh 1 cup Leeks 3.5 serving Pumpkin-Libby's 100% Pure Pumpkin (1/2 cup) 1 tsp Thyme, ground .5 tsp Pepper, red or cayenne 1.5 tsp MORTON Sea Salt, Fine Salt
Brown onions and garlic, celery, and carrots in olive oil (or butter). Add vegetable broth and simmer until carrots are tender. In second skillet, lightly brown mushrooms and leeks in a little butter or EVOO. Add to the broth and vegetable mixture. Add pumpkin and seasoning. Cook until flavors mix, approximately 20 minutes.
