1 large Zucchini, sliced into 1/4 inch rounds1 tbsp Extra Virgin Olive Oil 0.25 cup Progresso Bread Crumbs - Italian Style.25 tsp black ground Pepper
Wash and slice the zucchini into 1/4 inch rounds. Place in a bowl, add the olive oil and black pepper. On a flat plate, spread the bread crumbs. Spray a non stick skillet with a little olive oil or other oil spray. Heat the pan on
Medium setting. Take each zucchini medallion and press it into the bread crumbs, turn and coat other side, then place in the skillet. Repeat for all the zucchini. Cool about 5-6 minutes, turn when golden on underside. Cook about 10-15 minutes total, turning occasionally until soft and golden.
