Ingredients
2 sweetpotato, 5" long Sweet potato 6.5 oz Ground Pork 4oz bell pepper, red, sweet, raw (113 g)1 tsp Extra Virgin Olive Oil, Kirkland (1 tbsp=3tsp) 2 Tbsp Thai Kitchen Coconut Cream, Full fat Unsweetened (2 Tbsp = 30 g)0.45 cup Spinach, cooked (2 cups fressh)
Directions
Season pork with sage, pepper, Fennel to taste. Microwave sweet potato 5 minutes. In the meantime sautee sausage. Add spinach allow to cook. Add coconut cream and stir until blended. Slice & stuff sweet potato
