Stuffed Pepper Soup

Ingredients
1 tsp Extra Virgin Olive Oil1 medium Onions, chopped 5 Garlic Cloves, minced3 Green Peppers, chopped1 lb 93% Lean Ground Beef 2 (14.5) cans Stewed Tomatoes, no salt 7 cups Lower Sodium Beef Broth3 (5.5 oz) cans Low Sodium V8 Juice 1/2 cup instant Brown Rice
Directions
In a large pot add olive oil, onions, and garlic and saute until sweated.

Then add green peppers and saute for 5 minutes. Then add ground beef and cook until browned and then add tomatoes, broth, and V8.

Bring to a boil and add rice and simmer according to package instructions. Serve.
