Cheese Cauliflower Flat Bread

Ingredients
1 head, medium (5-6" dia) Cauliflower, raw 0.50 cup Aldi's Happy Farms Shredded Mild Cheddar Cheese (1/4 C) 1 large Egg, fresh, whole, raw 0.50 tsp MORTON Sea Salt, Fine Salt .25 tsp Pepper, black
Directions
Finely chop cauliflower florets in the food processor; pop in the microwave and cook for about 10 minutes. Preheat oven to 450. When cauliflower is cooled, squeeze the extra liquid with a cheese cloth. In a mixing bowl, mix cauliflower, egg, salt, pepper and cheese.
Line a baking sheet with wax paper, and mold mixture into a rectangle that is about 1/4 inch thick. Bake for 15-18 minutes, until golden and crips on top.
