Spicy eggplant stew

Ingredients
1 eggplant, unpeeled (approx 1-1 Eggplant, fresh 4 clove Garlic 2 tbsp Olive Oil 4 cup Canned Tomatoes 1 pepper Peppers, hot chili, red, fresh 4 gram(s) Star - Imported Nonpareil Capers (Serving Size = 1 Tsp./20 Capers) fresh thyme and oregano, if available
Directions
Chop eggplant into thin rounds; do not peel
Chop garlic
Saute garlic, herbs and chili pepper in olive oil.
Add eggplant and 1/4 cup water. Steam for 25 minutes.
Add canned tomatoes: simmer for 10 minutes
Serve with capers
