Paleo Mashed Potatoes

Ingredients
6 small (1-3/4" to 2-1/2" dia.) Potatoes, cubed4 oz Pacific organic Bone Broth, chicken1/2 cup Organic Almondmilk2 tbsp Extra Virgin Olive Oil, butter infused (Dairy-free)1/4 tsp Himalayan Salt, or to taste
Directions
Boil cubed potatoes in salted water until tender, then drain completely. Return potatoes to pot and add olive oil and bone broth. With a hand-mixer, begin whipping potatoes. Drizzle almondmilk into potatoes while whipping until desired consistency is achieved. Season to taste with salt and pepper.
