Mini Personal Pita Pizzas

Ingredients
2 Whole wheat pita breads, split in halfOlive oil or canola oil spray1/4 cup of pizza sauce, divided4 oz. of mozzarella cheese, part skim, divided1/4 cup of pamessan cheese, divided
Directions
1. Preheat oven to 400.
2. Using kitchen shears, cut just enough of the outer edge off of each pita to split into 2 pieces, giving you 4 crusts. Lightly spray each pita half with oil, place on a baking sheet and toast slightly in the preheated oven, 2-3 minutes.
3. Spread a tablespoon of pizza sauce on each pita evenly. Divide cheeses between each pizza, sprinkling evenly over the top. Toppings can be added at this point, but keep in mind that the nutritional information above is for cheese only. Bake in the oven until cheese has melted and begun to brown slightly. Allow to cool before eating.

    Tasty. I made some slight modifications based on what I had in the house (because I had less tomato sauce than I thought). I topped mine with salsa, some sauteed peppers and onions, and the mozzarella. Our 6 year old loved these. :) - 5/9/12

Joseph pitas 60 cal.Used whole one.Here is a breakfast pizza version: added 1/4 cup 2% cottage cheese/ Italian seasonings, baked a bit/cracked egg carefully in middle,1 tab parm/ seasoned/ baked/broiled till egg yolk cooked. - 1/2/17
