Ingredients
1 thigh, bone and skin removed Chicken Thigh .25 head, medium (5-6" dia) Cauliflower, raw .5 serving Bacon - Farmland Thick Sliced Bacon 0.25 cup Cheese - Kraft Shredded Cheddar Cheese .125 cup Yogurt Plain Greek Yogurt, non-fat 2 1tsp Olive Oil
Directions
Preheat oven to 450. Marinade chicken in olive oil and fresh thyme or other spices you choose and salt and pepper. Place bacon, chicken and cauliflower on a parchment lined baking sheet. Spray cauliflower lightly with butter flavored cooking spray. Sprinkle with salt. When bacon is cooked (approx 12-15 minutes) remove it to cool so you can crumble it. Continue cooking chicken and cauliflower until both are done, approximately another 20-25 minutes. A few minutes before cooking is complete, sprinkle cheddar over the cauliflower to melt. To serve, top the cauliflower with the Greek yogurt and the crumbled bacon..
