Atkins Caulifower "Potato" Salad

Ingredients
I medium head cauliflower ,broken into small florets1/4 cup light miracle whip2 Tablespoons lemon juice2 packets sugar substitute 1/2 tsp dry mustard or 1 tsp reg mustard to tasteonions optionalgreen bell peppers optionaleggs optionalsalt and pepper to taste
Directions
1. Cook cauliflower in large pot ot boiling salted water 10 minutes, until very tender. Drain and rinse under cold water, pat dry.

2.In a large mixing bowl, mix miracle whip, lemon juice,sugar substitute and mustard. Add cauliflower, onions, peppers and eggs if using. Add salt and pepper to taste. Chill 30 minutes for flavors to blend.
