Ingredients
1 can juice packed crushed pineapple (20 oz) - reserve juice1 package sugar-free orange gelatin mix (0.6 oz)1/2 cup ice2 Cups fat-free cottage cheese (16 oz)12 oz Light Cool Whip1 can mandarin oranges (11 oz)
Directions
In medium saucepan, bring 1 cup of reserved pineapple juice to a boil over medium-high heat. Remove from heat. Add the gelatin and stir for 2 minutes, or until dissolved. Add the ice cubes and stir until they melt. Refrigerate for 15 minutes, or until partially set.

In a food processor or blender, puree the cottage cheese until smooth. Fold into the gelatin mixture. In separate additions, fold in the Cool whip, pineapple, and oranges. Transfer to a shallow 2-quart dish. Cover and refrigerate for 2 hours, or until firm.
