Broccoli Sausage Quinoa Casserole

Ingredients
2 cup 365 Organic Quinoa 1.5 cup Fat free half and half 2 cup Chicken stock, home-prepared 5 serving Mild Italian Chicken Sausage - Never Any (Kirkwood - Aldi) 1 link - 85g .5 cup, chopped Onions, raw .5 cup, chopped Carrots, raw 6 cup, chopped Broccoli, fresh 2 tbsp Butter, unsalted 0.125 cup Flour - Gold medal all purpose flour 60 gram(s) Bread Crumbs, Panko (Japanese style), Kikkoman-1/2 cup, 30g 1 cup Kraft Shredded 2% Mexican Four Cheese blend
Directions
cook quinoa according to pkg directions, set aside (15 mins or so)
chop 1/2 cup onions and 1/2 cup carrots, saute in dutch oven with chicken sausage (take out of casings), remove from pot and set aside, keep drippings in pot. (about 15 mins of prep/cooking)
Add 2 tbsp butter, flour and 2 cloves garlic finely chopped, mix and heat for 1-2 minutes add in half n half, chicken stock and 1/2 cup of water - stir and bring to a boil. Once boiling add in 6 cups of broccoli, reduce heat to medium, stir frequently for about 5-7 minutes. Turn off heat, add the quinoa and stir, add the reserved sausage and carrot/onion, add 1/2 tsp ground thyme, 1/2 tsp black pepper, 1/2 tsp salt and stir again.
Pour into 11x17 glass baking dish.
In separate dish, add panko, 1/2 tsp EVOO and 1 cup of cheese, mix thoroughly. Sprinkle over top of casserole. Bake in preheated 400 degree oven for 25 minutes
