Spicy Penne alla Vodka w/ Ricotta & Romano

Ingredients
16 oz Whole Wheat Penne (dry) 1 large Onions, raw 12 tsp Garlic Minced (by MASHELDON) 1 can (6 oz) Tomato Paste 1.5 cup, fluid (yields 2 cups whip Heavy Whipping Cream 4 tsp Basil 0.5 cup Ricotta Cheese, whole milk 2 oz Romano Cheese 3 tsp Crushed Red Pepper Flakes (by SHERILG) 2 tbsp Canola Oil
Directions
Cook pasta according to directions. Mince onion and saute with garlic and crushed red pepper in a neutral oil like canola over medium heat. Once onions are translucent and red pepper has bloomed, Add tomato paste and smooth paste mixture over bottom of pan, covering. Once fragrant, add heavy cream, gently stirring into tomato paste until incorporated. Add basil and ricotta, stirring through, crushing lumps of ricotta as you find them. Once sauce has begun to bubble, stir in romano and then cooked pasta.
