Zucchini Boats

Ingredients
1 large zucchini (@12 -13 inches), do not peel20 oz pkg Jennie-O Italian Seasoned Ground Turkey Sausage1 green peppers, chopped1 med onion, chopped1 15-oz can Hunt's Tomato Sauce2 8-oz cans Hunt's Tomato Sauce w/Basil, Garlic & Oregano2 4-oz cans mushrooms, stems & pieces1-2 cups Shredded Part Skim Mozzarella CheeseGarlic Powder & pepperSalt & Pepper to taste1 tsp sugar, optional
Directions
Cut zucchini in half and cut out center, discard large seeds, cut remainder up in small pieces and set aside.

Sprinkle zucchini halves with garlic powder & pepper. Set halves on plate, cover with plastic wrap & microwave on high about 6 minutes, checking every 2 minutes until crisp tender (will finish cooking in oven). Microwave pepper & onions until tender. Brown turkey sausage, add peppers, onions, mushrooms, chopped zucchini, 15-oz can tomato sauce & 1 (one) 8-oz can tomato sauce. Salt & pepper to taste. Add 1 tsp sugar (optional) to cut acid in tomatoes. Cook for 10 minutes.

Line 8-1/2 x 11 glass baking pan with remaining 8-oz can tomato sauce. Put zucchini "boats" in pan. Fill with stuffing. Excess stuffing can be put around boat. Bake uncovered at 350 degrees for 30 - 45 minutes (until bubbly). Remove from oven, sprinkle with Mozzarella cheese I used about 1 cup). Bake, uncovered, with oven off for a few minutes until cheese is melted. Serves 8.

Serve with salad & your favorite Texas Toast.
