Cashew Ginger Chicken

*3/4 pound skinless boneless chicken breast, cut into 1" cubes*2 onions, chopped*2 celery stalks, chopped*3 garlic cloves, minced*1 cup sliced mushrooms*1 cup bean sprouts*1 cup trimmed snow peas*1/4 cup unsalted dryroasted cashews*1 Tbsp minced peeled gingerroot*1 Tbsp reduced sodium soy sauce*3 cups hot cooked brown rice
1. Spray a large nonstick skillet or wok with non stick cooking spray; heat. Add chicken and cook, stirring as needed, ntil lightly browned, about 3 minutes. Transfer to plate.
2. Spray the same skillet with more nonstick cooking spray; heat. Add onions, celery and garlic, cook, stirring as needed, about 5 minutes.
3. Add the mushrooms, bean sprouts, snow peas, cashews,ginger, soy sauce, and the chicken; cook, stirring as needed, until the chicken is cooked through and the vegetables are tender, 4-5 minutes. Serve the rice, topped with the chicken mixture.
