Mint chocolate cookies

Ingredients
* 1 cup margarine, softened * 1 cup Splenda * 3/4 cup packed light brown sugar * 2 teaspoons vanilla extract * 1/2 teaspoon salt * 2 eggs * 1 cup all-purpose flour * 1 cup whole wheat flour * 1/2 cup cocoa * 1 teaspoon baking soda * 1 tbsp mint extract
Directions
1. Heat over to 375 degrees F.

2 Beat margarine, Splenda, brown sugar, vanilla, mint extract and salt in a large bowl until creamy.

3. Add eggs; beat well.

4 Stir together flours, cocoa and baking soda.

5 Gradually add flour mixture to butter mixture beating until well blended.

6 Drop by rounded teaspoons onto an ungreased cookie sheet.

7 Bake 8 to 10 minutes or until set. Cool slightly; remove from cookie sheet to wire rack.

8 Cool completely.

Makes 30 servings of 2 cookies, 60 cookies total.
