Low Carb Pizza on Roasted Eggplant Slices

1 fresh Eggplant, washed, unpeeled and sliced lengthwise in approx. 5 to 6 - 1/2" slices1/4 cup of homemade or store bought pizza sauceApprox. 30-40 Pepperoni slices1/2 cup of raw onions (I like to lightly saute them prior to assembly)1 small can of sliced Black Olives6-8 oz of grated Mozzarella CheeseOlive oil and Red Pepper Flakes as needed
This is a fun and easy main dish or snack to make. Pre-heat your oven to 450 degrees F.
I like to slice my unpeeled Eggplant lengthwise to make big oval pieces, but you can slice it the other way for smaller pieces if you're serving kids. Lightly brush the slices with olive oil and brown them on your BBQ, indoor grill or pan (approx. 5-8 min.). Place the slices in a large flat oven pan.
Add a light layer of Pizza Sauce, top with Pepperoni, Onions, Black Olives and Cheese. As with any pizza, you can vary the ingredients to your tastes. Sometimes I like make it with Sausage, Mushrooms and Jalapenos. Get creative!
Cook for 10 minutes. Open the oven door and Broil until cheese is bubbly and golden brown.
Garnish your pizza with Parmesan Cheese and Red Pepper Flakes. Add a small salad and you have a meal. Who needs pizza crust when healthy pizza tastes this good!

Delish! My recipe variation: Microwaved the eggplant slices first. Left off the pepperoni, onions and black olives. Used marinara instead of pizza sauce, then topped eggplant with grilled chicken strips, slice of Jersey tomato, thin slice of fresh mozzarella. Sprinkled parmesean on top. Yum! - 8/12/09
