Ingredients
Cut 2 large tomatoes in 1/8 wedgesCut mushrooms into slices to make 3 cupsSlice each yellow and green pepper into narrow stripsSlice 2 medium, tender zucchini Slice enough yellow cooking onions to fill 3 cupsPeel and crush 4 garlic cloves
Directions
Sautee vegetables in 2 tbsp. of grapeseed oil over low heat. Season with salt, pepper and add a whole bay leaf to ingredients. Add crushed garlic toward end of cooking time. Do not overcook. Let vegetables still have a bit of bite to them. A great compliment to meat dishes or layered into vegetarian lasagna or over pasta, rice, coucous and even over crusty toast a la bruschetta. Fabulous!
