Low-Cal Vegan Pancakes for One

Ingredients
1/3 c. All-Purpose White Flour1 tsp. Sugar1 tsp. Baking Powder1/2 tsp. Salt1/3 c. Water1/2 tsp. Corn Oil (or other vegetable oil)Topped with:1/2 tsp. Earth Balance1/2 tsp. Powdered Sugar(or to taste, you can use other toppings if you want)
Directions
Mix all of your ingredients together, making sure not to overmix (lumps are good), and then cover & let sit for ten minutes.

Heat up your griddle or pan on medium-high heat & cook (hopefully you know how to make pancakes!)

Top with Earth Balance (or other vegan margarine) & a little powdered sugar.

NOTE: If you want this to be truly vegan, make sure to use vegan sugar & powdered sugar!

    I added 1-1/2 tsp of vanilla extract and 1/2 tsp of cinammon to these, and they were very good - not too runny (or the opposite - dry) like recipes I have tried before.

    To improve these, I would replace the 1/3 cup water with soy milk, just to give them a little bit more flavour. - 11/12/08

    i switched the oil for margarine and drizzled my pancakes with agave nectar and added some vanilla coconut gelato on top. it looked like something from a magazine and was amazing. - 6/26/15

    These were fantastic! My first Vegan style pancake, too! hehe. I'll for sure be making these again,(I made it a little bit like pumpkin pie, with the spices I put in). My only complaint is that there was too much salt! I'd cut the salt down by half, at least! But, that's just me :) - 6/24/10

    These were good, I think they would be good topped with fruit or jam next time. I did add a dash of allspice and almond milk to them but otherwise followed the recipe exactly. I like that it is for one serving too. - 5/13/10
