Jamaican Curried Chicken

Ingredients
12 oz. chicken breast0.5 cup onion, chopped0.5 cup green peppers, chopped2 cups yams, cubed2 tsp. salt1 tbsp. cayenne pepper2 tbsp curry powder1tsp. thyme3 cloves garlicCanola oil cooking spray
Directions
Spray frying pan with cooking spray. Saute onions, thyme, garlic and green peppers. Add curry, salt, cayenne pepper. Let the curry cook for a few minutes on low heat. Stir in chicken breast and yams. Add enough water to half cover the chicken and yams. Cover the pan and let simmer until yams are soft and chicken is cooked.
