Directions
One onion blended into pulp,One bunch of cilantro ground along with shredded coconut and jalepeno.One tomato ground into pulp or 1 cup tomato pureeHalf pack of any frozen vegeable mixOne tsp curry powderOne tsp turmeric powderSalt to taste
Heat the pan and add one tbsp of canola oil. When the oil is hot, add the onion pulp and let it cook for about 2 minutes. Once the color starts changing add the cilantro and coconut mixture. Let it cook for 10 minutes and then add the curry powder, turmeric powder and stir it in.
After 5 minutes add the mixed v egetables and salt and let it cook until the vegetables are well cooked .
Serve it hot with bread or traditional indian roti (wheat breads available in indian stores).
You can try the same basic sauce for meats and poultry too.
