Grubergirl's Vege Quiche Cups

Ingredients
10 oz package of frozen mustard greens, thawed and sqeezed dry1 cup reduced fat cheddar cheese shredded1 cup chopped onion1 bell pepper chopped16 oz container egg substitute (like Egg Beaters)1 or 2 jalepeno or cayenne peppers chopped
Directions
Combine all ingredients and place in 12 foil lined muffin cups. Cook at 350 for 30 minutes or until the muffins rise and look baked on top. (You can also place the mixture in an 8x8 pan and bake for 45 minutes.) Serving size:2 muffins
