Olive Relish

Ingredients
1 (4.25oz) can chopped black olives1 (2oz) can diced pimientos1 tsp minced garlicJuice from 1/2 lemon (approx 1/2 tsp)1/2 tbsp extra virgin olive oil
Directions
Combine all ingredients.

I really like this on a sandwich-
Open-Faced Sandwiches:
Preheat oven to 350 degrees.
Place 1 slice of whole grain bread on a baking sheet.
Drizzle bread (LIGHTLY) with olive oil
Spread 1-2 tbsp of olive relish onto bread
Top with vegan mozarella cheese
Bake for about 5 minutes until cheese is melted.
