Chicken Scampi over Penne

Ingredients
2 Large skinless, boneless chicken breasts - cut into strips4 tsp. or 1 Tbsp. minced garlic1 Tbsp olive oil1 c. White wine (cooking or other)1/2 box of Hodgson Mill organic whole wheat penne with milled flax seed
Directions
Makes 6 servings with 1 cup pasta and 4 oz. chicken.

Heat olive oil over med. high heat in a large skillet. Add garlic and brown lightly. Meanwhile, cook pasta according to package directions. Add chicken and cook 2-3 minutes per side or until browned. I season the chicken with Adobo seasoning and parsely. Add cooking wine, cover and simmer for 10 minutes. Uncover and simmer an additional 5 min. Serve over 1 cup of the cooked Hodgson mill pasta. You can cut the calories by 215 if you only have 1/2 cup pasta for a light lunch or dinner.
