Allie's Veggie Alternative to Chicken Salad

Ingredients
8oz of manchego cheese, cubed1 cup of seedless grapes, halved4 medium stalks of celery, chopped4oz of pecans, crushed1 medium sized jicama, peeled and cubed1/2 cup (8 tablespoons) of Ken's Steakhouse Lite Sweet Vidalia Onion Salad Dressing
Directions
mix all the ingredients together and serve in a pita pocket, tortilla, on sliced bread, or mix with spinach for a great salad.

i've also really enjoyed this mix with Brianna's Homestyle Poppyseed Dressing (160 calories per 2 tablespoons).

makes 8 1-cup servings. great for storing in individual containers in the fridge and grabbing as a quick lunch.
