Sicilian Chicken Cacciatore

5 Chicken breasts, cut into 3 oz portions2 15 oz cans Hunt's tomatoes sauce2 14.5 oz cans Contadina diced tomatoes, drained2 4 oz. cans Green Giant mushroom pieces, drained and rinsed1 large onion, chopped1 cup white flour3 tbsp evoo3 tbsp black pepper2 tbsp crushed red pepper1 tbsp garlic1 tbsp oregano.5 tbsp basil.5 tbsp ground cloves
coat bottom of a dutch oven with evoo and place over medium high heat. place flour and black pepper in a freezer bag. dredge chicken pieces in the flour. add chicken and onions to the the evoo and brown. after chicken has browned on both sides, remove it from the pan and coat the bottom with tomatoe sauce. this will "deglaze" the pan and retain the great flavors of the pan drippings. place a layer of chicken on the sauce and add half of all the remaining ingredients over top of it. place another layer of chicken on top of that and add the remainder of the ingredients over that. slow cook this mixture at medium heat for 2 hours. make sure you stir the chicken cacciatore regularly to keep it from sticking to the bottom of the pan. by the end of the 2 hours, the chicken should shred easily. salt and pepper to taste. serve over your favorite pasta for a complete dinner... i use heartland's perfect balance rotini (it is VERY low in sodium, which makes up for the salt in the sauce). this meal can also easily be made in a crock pot... just make sure to brown the chicken first to lock in the great flavor. enjoy!
