Strawberry Rhubarb Crisp

2 cups rhubarb, diced 1 cup strawberries, halved2 tb granulated sugar1/4 cup rolled oats2 tb butter3 tb brown sugarDash cinnamon
Soften butter slightly. With a fork, combine oats, butter, brown sugar, and cinnamon in a bowl and mix to a crumbly consistency. Simmer rhubarb with granulated sugar in a heavy pot on the stove 5-7 minutes. When cool, divide the cooked rhubarb into two ramekins. Add strawberries, half in each. Top with butter mixture. Bake at 375 for 30 minutes. Serve warm or cool with yogurt or ice cream.
