1.5 pounds uncooked new potatoes, quartered1 Tbsp Olive Oil2 Tbsp Dijon Mustard.75 tsp Paprika.25 tsp dried thyme.5 tsp salt.25 tsp black pepper
Coat a 9"x13" baking pan with cooking spray, and heat oven to 425F.
Whisk together oil, mustard, paprika, thyme, salt and pepper in a large bowl. Add quartered small potatoes and stir til they are coated.
Put potatoes in baking dish and roast 15 minutes. Stir and roast another 15 minutes.
