Weeknight Pizza Crust

Ingredients
1 cup whole-wheat flour1 cup all purpose flour1 pkg quick rise yeast1 tsp salt1 tsp honey (or sugar)3/4 cup warm water1 T extra virgin olive oil
Directions
Mix the flours, yeast, salt and sugar in a large bowl. (If using honey, do not add yet) In a separate container mix all liquid ingredients (including honey). Preheat oven and pizza stone or baking dish in oven at 500 degrees. Add liquid to dry ingredients. Knead into ball shape adding up to 2 tsps of water if dry or 2 tsps of flour if too sticky. Place dough on plastic wrap sprayed with non stick spray. Lightly cover with towel or plastic wrap. Let the dough rest for 10-15 minutes. Remove baking dish from oven, and roll dough onto it (Makes about 14" thin crust). Add toppings of your choice. Cook for 10-15 minutes or until crust is brown. Makes 8 servings. Calories are for crust only.

    Good basic recipe. The yeast needs to be activated with sugar before being added to the rest of the ingredients. Salt especially will prevent the yeast reaction. - 8/20/08
