Eggplant and peppers medley (South Beach diet)

Ingredients
1 Eggplant, peeled, cut in half and sliced2 red peppers, cut in strips1 green pepper, cut in strips1 onion, sliced0.25 cup olive oil
Directions
Preheat oven at 175°C (360 Farenheit) Put the eggplant, sliced, the peppers and the onion on a oven-proof pan. Cover with the olive oil and bake them for 20 minutes. Enjoy!

    I prepared this dish with eggplant, yellow, purple bell pepper sliced red onion my usual seasonings. I know for sure this is a staple side dish for me. I recipes that you can make with ingredients that are already on hand. - 8/5/11

    It helps if you salt the eggplant for 30 minutes or so,then rinse it. It makes the eggplant more tender. Just a suggestion! - 8/27/09
