Cottage Cheese(nonfat), 1 cupGreen bellpepper(chopped), 1/2 cupYellow bellpepper(chopped), 1/2 cupBroccoli(chopped), 1/2 cupCarrots(chopped), 1/2 cupIceberg Lettuce, 1/2 cupOlive oil, 2 tbspLemon Juice, 1tbspHoney, 1tbspSalt, 1 dash
1. Mix the oil, lemon juice, salt and honey to make the dressing.
2. Toss the cottage cheese in a bowl with all the vegetables and the dressing right before serving the salad.
You can also add cooked chicken pieces in the salad if you want to make it more filling. Feel free to add any vegetables you have at hand.
