L.R. zucchini bread with flax and oat bran

Ingredients
1/2 cup ground flax seed1-1/4 cups oat bran2 cups whole wheat flour1-3/4 cups brown sugar(preferable raw01 T. baking powder1 tsp. baking soda1-1/2 tsp. salt4 tsp. cinnamon1 cup buttermilk6 eggs 6 cups shredded zucchini1 cup walnuts, chopped
Directions
In a large bowl combine all dry ingredients. In another bowl whisk together buttermilk and eggs. Stir wet into dry. Don't mix very well. Add zuchini and nuts and mix all the way. Do not overmix. Divide into 3 greased and wax paper lined 4"x8" bread pans. Bake at 350 for about 50 minutes or until tests done. Makes 36 slices altogether.

    Don't know, never tried it. I would guess it would be thinner though and probably wouldn't hold the moister as well.
