zucchini and white bean saute

Ingredients
1 t. olive oil1 small onion3 cloves garlic2 cups summer squash, chunks1 carrot, thinly slicedfresh herbs: oregano, basilpepper to taste1 can cannellini or small white beans2 plum tomatoesadd parmesan/romano cheese to taste
Directions
Saute onions & garlic in oil.
Add squash, fresh herbs, pepper, carrot
Cover and cook over low heat 5-8 minutes
stir in beans, tomatoes; cook on low heat 2-5 min
Serve with cooked grain: rice, barley, pasta, etc.
Add grated cheese to taste.
