Hearty Split Pea Soup with Turkey

5.5 cups water2.5 cups dried split peas (no need to presoak)0.5 cups onion, finely diced1 cup carrot, grated5 oz cooked turkey breast meat, diced or shredded1 tsp black pepper (to taste)0.5 tsp sea salt1 tbsp lemon juice3 cloves garlic, minced1 tsp marjoram, fresh if avail, minced4 cups vegetable broth, low sodium
Yield: 6 x 1.25-cup servings
Cooking time: 1h45m
Combine water, broth, peas, onion and turkey in a large soup pot over med heat. Bring to a simmer and cover for about 1 hour, stirring occasionally.
Add carrots, pepper, salt, garlic and marjoram to pot and mix well. Simmer uncovered for 45 minutes or until soup starts to thicken. Stir occasionally, reduce heat if soup sticks to bottom. Peas should be soft and tender now.
Remove from heat and stir in lemon juice. Serve immediately. Freezes well!
Veggie version - just omit the turkey!
