2 1/2 C grated Carrots2 12 C apple juice1 1/2 C raisin2 C whole Wheat Flour1/2 C Enova oil2 eggs 2Tbsp 2tsp Deb El Just Whites (4 whites)1 Tbsp Vanilla Extract3/4 C applesauce unsweetened1/2 C wheat germ2 Tbsp baking powder1 Tbsp ground cinnamon
Preheat oven 350. Line 2 9" round cake pans with parchment paper and spray with non-stick spray.
Bring carrots and 1 C plus 2 Tbsp apple juice to a boil in a medium sauce pan.
Lower heat and simmer until tender. Puree in food processor.
Add raisins, pulse and let cool.
Combine Dry ingredients, add remaining ingreidents and fold in carrot mixure and applesauce.
Pour batter into pans
Bake until knife comes out clean. 35-40 min. Allow to cool for 5 min and turn out onto racks to cool.
When cool frost with cream cheese frosting if desired.
