Pumpkin & chickpea stew

2 tbsp olive oil1 large onion2 garlic cloves, crushed2 tsp ginger, freshly grated1/2 tsp saffron threads, soaked in 1/4 c cold water1 cinnamon stick400 ml vegetable broth800g pumpkin, peeled and cubed400g can chickpeas, rinsed and drained200g green beans 1 tsp honey320g cous cous40g sultanas
Heat oil in saucepan over a medium heat. Add onion and cook until translucent. Add garlic, ginger, saffron, cumin and cinnamon stick, cook for 1-2 mins until fragrant.
Add vegetable broth and bring to the boil.
Add pumpkin, reduce heat and simmer covered until pumpkin is tender (about 15 mins). add the chickpeas, green beans and honey, simmer for a further 5 minutes.
Serve over sultana cous cous. (add the sultanas to the dry cous cous, prepare cous cous as per packet instructions).
