Romaine Lettuce 2 cup, shredded or 1 little gem per personred wine vinegar, 3 tablespoon Olive Oil, 3 tbsp Red Ripe Tomatoes, 2 Italian tomato Bacon, 4 medium slicesGranulated Sugar, .5 tsp
Prepare greens set aside.
Cut bacon into lardons. (small chunks). Cook until crips in a frying pan - 2-4 minutes. Add vinegar. Cook for 2 minutes more. Taste. Season, add sugar if needed to reduce acidic bite. Add oil. Toss in tomatoes. Warm though, less than 1 minute. pour warm dressing over lettuce. Serve immediately.
