1 well-trimmed beef rib roast (6 to 8 pounds), chine bone removed6 large cloves garlic, crushed1-1/2 tsp. dries thyme leaves1 tsp. cracked black pepper
Directions
Cook at 350°F for 2-1/4 to 2-1/2 hours.
Internal temp 135°F for medium rare or 150°F for medium.

    I thought it was outstanding. Sometimes you just need some comfort food and this is mine. I had a smaller roast and added rosemary and sage to the mix. We served it with horse radish sauce. Very nice recipe and I'm glad you included the temperature for medium rare. - 11/21/10
